Beef Burgers

What is Beef Burgers?

Beef Burgers are sandwiches made with a seasoned ground beef patty placed inside a sliced burger bun. The patty can cook on a skillet, grill, or griddle until browned outside and cooked through inside. Classic toppings include lettuce, tomato, onion, pickles, cheese, ketchup, mustard, and mayonnaise. You can keep the burger simple or add extra toppings for more flavor. The key to a good burger is using ground beef with enough fat to keep the patty juicy while it cooks.

Ingredients

  • 1 pound ground beef, preferably 80% lean and 20% fat
  • 4 hamburger buns
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon vegetable oil, if cooking in a skillet
  • 4 slices cheddar cheese, optional
  • 4 lettuce leaves
  • 1 large tomato, sliced
  • 1/2 small red onion, thinly sliced
  • 8 pickle slices
  • 2 tablespoons ketchup
  • 2 tablespoons yellow mustard
  • 2 tablespoons mayonnaise

Instructions

1. Prepare the beef: Place the ground beef in a bowl. Add salt, black pepper, garlic powder, and onion powder. Mix gently until the seasonings are spread through the meat.

2. Shape the patties: Divide the beef into four equal portions. Shape each portion into a patty about 1/2 to 3/4 inch thick. Make a small dent in the center of each patty with your thumb.

3. Heat the pan or grill: Heat a skillet, griddle, or grill over medium-high heat. Add the oil if using a skillet.

4. Cook the patties: Place the patties on the hot cooking surface. Cook for about 4-5 minutes on the first side. Flip and cook for another 4-5 minutes, or until the burgers reach a safe internal temperature of 160 F.

5. Add cheese: Place one cheese slice on each patty during the last minute of cooking. Cover briefly so the cheese melts.

6. Toast the buns: Cut the buns in half and place them cut-side down on the hot pan or grill. Toast for about 1-2 minutes until lightly golden.

7. Build the burgers: Spread ketchup, mustard, and mayonnaise on the buns. Add lettuce, the beef patty, tomato, onion, and pickles.

8. Serve: Place the top bun over each burger. Serve hot with fries, potato wedges, coleslaw, or a fresh salad.

Essential Note

Do not press the patties while they cook. Pressing them forces the meat juices onto the hot surface and can make the burger dry. Handle the ground beef gently when mixing and shaping. This helps keep the patty tender.

Use a food thermometer to check the center of the thickest part of each patty. Ground beef should reach 160 F for food safety. Do not rely only on the outside color to judge doneness.

The small dent in the center helps the patty keep a more even shape as it cooks. Without it, the burger can puff up in the middle and become harder to stack with toppings.

Let the cooked patties rest for about 2-3 minutes before serving. This gives the juices a short time to settle. Toasting the buns also helps them hold the sauces and meat juices without becoming too soft.

For the best flavor, choose ground beef with about 20% fat. Very lean beef can produce a firm and dry burger. Keep raw ground beef cold until you are ready to shape the patties, and wash your hands, tools, and surfaces after handling raw meat.

Recipe Notes

For juicy Beef Burgers, use 80/20 ground beef, season simply, avoid overmixing, cook over medium-high heat, toast the buns, and add fresh toppings just before serving.

Cooking Tips and Tricks

Use 80/20 ground beef for a juicy burger with good flavor. Avoid mixing the meat too much because it can make the patties dense. Shape the patties slightly wider than the buns because they shrink during cooking. Keep the center slightly thinner or make a small thumbprint to reduce puffing. Get the skillet or grill hot before adding the beef. This helps create a browned crust. Do not flip the patties again and again. One flip works well for most burgers. Add cheese during the final minute so it melts without burning. Toast the buns lightly for better texture. Keep toppings cold and fresh, and assemble the burgers just before serving.
