Ground Beef Stroganoff

What Is Ground Beef Stroganoff?

Ground Beef Stroganoff is a simple version of traditional beef stroganoff. Instead of sliced beef, it uses ground beef cooked with onions and mushrooms.

The beef mixture gets coated in a creamy sauce made with beef broth, sour cream, Worcestershire sauce and seasonings. Egg noodles soak up the sauce and make every bite rich and satisfying.

Ingredients

  • 1 pound lean ground beef
  • 8 ounces mushrooms, sliced
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 cup sour cream
  • 8 ounces egg noodles
  • 2 tablespoons fresh parsley, chopped

Instructions

1. Cook the noodles: Boil the egg noodles in salted water according to the package directions. Drain them and set aside.

2. Brown the beef: Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it into small pieces. Drain extra grease if needed.

3. Cook the vegetables: Add butter, onion and mushrooms. Cook for 5-7 minutes until the onion softens and the mushrooms lose most of their moisture.

4. Add garlic: Stir in the garlic and cook for about 30 seconds. Do not let it burn.

5. Make the sauce: Sprinkle flour over the beef mixture. Stir well and cook for 1 minute. Slowly pour in the beef broth while stirring.

6. Add flavor: Stir in Worcestershire sauce, Dijon mustard, paprika, salt and black pepper. Simmer for 3-5 minutes until the sauce thickens.

7. Add sour cream: Reduce the heat to low. Stir in the sour cream until the sauce becomes smooth and creamy.

8. Combine and serve: Add the cooked egg noodles and gently toss until coated. Sprinkle with fresh parsley and serve warm.

Essential Note

  • The most important part of this recipe is controlling the heat when you add sour cream. High heat can make sour cream separate and give the sauce a grainy texture. Keep the skillet on low heat and stir the sour cream into the warm sauce slowly.
  • Do not rush the mushrooms. Let them cook until their liquid evaporates and their edges turn lightly brown. This gives the stroganoff a stronger savory flavor.
  • When adding beef broth, pour it in gradually while stirring. This helps the flour blend into the liquid without forming lumps. If the sauce becomes too thick, add a small splash of beef broth.
  • For food safety, cook ground beef to 160 F as measured with a food thermometer. Keep leftovers refrigerated within two hours and use them within 3-4 days.

Recipe Notes

For the creamiest sauce, use full-fat sour cream and add it over low heat. Serve immediately with egg noodles, parsley and extra black pepper.

Cooking Tips and Tricks

  • Choose lean ground beef so the sauce does not become too greasy. If your beef releases a lot of fat, drain it before adding the vegetables.
  • Slice the mushrooms evenly so they cook at the same rate. Give them enough space in the skillet to brown instead of steam.
  • Cook the flour for about 1 minute before adding broth. This removes its raw taste and helps thicken the sauce.
  • Add broth slowly and stir constantly for a smooth gravy. Keep the heat low after adding sour cream to prevent curdling.
  • Cook the noodles just until tender. Slightly firm noodles hold their shape better when mixed with the creamy sauce. Serve the stroganoff right away for the best texture.
