Serve it hot with bread or crackers for a comforting meal.

Chicken Soup

What Is Chicken Soup?

Chicken soup is a broth-based dish that combines chicken with vegetables, herbs, and seasonings. The chicken cooks in the broth, which gives the soup a deep and savory taste.

Common vegetables include carrots, celery, and onions. Garlic, black pepper, and herbs add more flavor without making the recipe hard to prepare.

Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts or thighs
  • 8 cups chicken broth
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt, or to taste
  • 1 bay leaf
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook the onion and garlic: Heat olive oil in a large pot over medium heat. Add onion and cook for 3 minutes. Add garlic and cook for 30 seconds.
  2. Add the vegetables: Stir in carrots and celery. Cook for about 3 minutes to soften them slightly.
  3. Add chicken and broth: Place the chicken in the pot. Pour in the chicken broth, then add thyme, parsley, black pepper, salt, and bay leaf.
  4. Simmer the soup: Bring the soup to a gentle boil. Reduce the heat and simmer for 20-25 minutes, or until the chicken reaches 165 F in the thickest part.
  5. Shred the chicken: Remove the chicken and let it cool for a few minutes. Shred it with two forks, then return it to the pot.
  6. Finish the soup: Remove the bay leaf. Stir in lemon juice and fresh parsley. Taste and adjust the salt and pepper.
  7. Serve: Ladle the hot chicken soup into bowls and serve right away.

Essential Note: Keep the soup at a gentle simmer instead of a hard boil. A strong boil can make chicken tough and cause the broth to become cloudy. Always check chicken with a food thermometer and cook it to 165 F. If you use chicken thighs, the meat may need a little more time to become tender. For a thicker soup, add cooked rice or noodles near the end. If you add uncooked noodles, cook them according to their package time and watch the liquid level. Add a little extra broth if needed. Taste the soup before serving because chicken broth can contain different amounts of salt.

Recipe Notes

Store leftover chicken soup in an airtight container in the refrigerator for up to 4 days, or freeze it for up to 3 months for easy future meals.

Cooking Tips and Tricks

Use chicken thighs for richer flavor and chicken breast for a leaner soup. Cut the vegetables into similar sizes so they cook evenly. Keep the heat low after the soup starts boiling. This helps the chicken stay tender and keeps the broth clear.

Do not add too much salt at the start. Broth can become saltier as the soup cooks. Taste near the end and adjust the seasoning.

Fresh lemon juice can brighten the broth and balance its savory flavor. Add it after cooking rather than at the beginning.

For chicken noodle soup, add cooked noodles just before serving. This keeps them from becoming too soft. For meal prep, store noodles separately and add them when reheating.
