- 1 cup freshly grated Parmesan cheese
- ½ teaspoon salt, plus more for pasta water
- ¼ teaspoon black pepper
- ¼ teaspoon Italian seasoning
- 2 tablespoons chopped fresh parsley
- ¼ teaspoon red pepper flakes, optional
- ½ cup reserved pasta water, as needed
Instructions
1. Cook the pasta:
Bring a large pot of salted water to a boil. Cook the fettuccine until al dente, following the package time. Reserve ½ cup pasta water, then drain the pasta.
2. Season the shrimp:
Pat the shrimp dry with paper towels. Season with salt, black pepper, and Italian seasoning.
3. Cook the shrimp:
Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add the shrimp and cook for about 2 minutes per side, until pink and cooked through. Remove the shrimp from the skillet.
4. Cook the garlic:
Lower the heat to medium. Add the remaining butter and minced garlic. Cook for about 30 seconds until the garlic smells fragrant. Do not let it turn dark brown.
5. Make the Alfredo sauce:
Pour in the heavy cream and stir. Let it gently simmer for 2-3 minutes. Add Parmesan cheese a little at a time and stir until the sauce becomes smooth.
6. Combine everything:
Add the cooked pasta to the skillet. Toss well to coat it with the Alfredo sauce. Add a small amount of reserved pasta water if the sauce feels too thick.
7. Add the shrimp:
Return the shrimp to the skillet and gently toss with the pasta. Cook for about 1 minute so everything heats together.
8. Serve:
Top with fresh parsley, extra Parmesan and red pepper flakes, if desired. Serve immediately.
Essential Note
The most important part of Shrimp Alfredo Pasta is controlling the heat. High heat can make the cream sauce separate and can also make shrimp tough and rubbery.
Cook the shrimp only until it turns pink and opaque. Large shrimp usually need about 4 minutes total, but size and heat can change the cooking time. Remove them from the pan as soon as they finish.
Use freshly grated Parmesan when possible. Pre-shredded cheese may not melt as smoothly because it can contain anti-caking ingredients.
Add Parmesan over low or medium-low heat and stir constantly. If the sauce becomes too thick, add reserved pasta water one tablespoon at a time. The pasta water contains starch, which helps loosen the sauce while keeping it creamy.
Do not rinse the pasta after draining. The starch left on the pasta helps the Alfredo sauce cling to each strand.
For food safety, cook shrimp until it reaches 145 F internally and looks opaque throughout. Refrigerate leftovers within two hours and use them within 3-4 days.
