It is a great choice for busy weeknights when you want something homemade without using several pots. The pasta absorbs the sauce as it cooks, which gives every bite plenty of flavor. I like this recipe because you can start with a few basic ingredients and have dinner ready in about 30 minutes. It also works well for family meals, meal prep, or a quick comfort food dinner.

One-Pot Chicken Pasta is a pasta dish where the chicken, pasta, sauce, and other ingredients cook in the same pot. Unlike traditional pasta recipes, you do not need to boil the pasta in a separate pot.

As the pasta cooks in the broth and sauce, it releases starch. This helps create a smooth and slightly thick sauce that coats the pasta well. The chicken adds protein, while garlic, onion, and seasonings bring more flavor.

You can use penne, rotini, rigatoni, or another short pasta. Add spinach, broccoli, mushrooms, or bell peppers if you want more vegetables.

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into small pieces
  • 12 ounces penne pasta
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 3 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 1 cup chopped spinach
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced tomatoes, optional
  • 2 tablespoons chopped fresh parsley
  • Extra Parmesan for serving

Instructions

1. Cook the chicken.
Heat olive oil in a large deep skillet or pot over medium-high heat. Add the chicken, paprika, salt and black pepper. Cook for about 4-5 minutes, stirring often, until the outside turns golden.

2. Add onion and garlic.
Add the chopped onion and cook for 2 minutes. Stir in the garlic and cook for about 30 seconds.

3. Add pasta and liquid.
Add the uncooked pasta, chicken broth, heavy cream and Italian seasoning. Stir well so the pasta stays under the liquid.

4. Simmer.
Bring the mixture to a gentle boil. Lower the heat and simmer uncovered for about 12-15 minutes. Stir every few minutes to stop the pasta from sticking.

5. Add spinach and Parmesan.
When the pasta becomes tender and most of the liquid turns into a creamy sauce, add spinach and Parmesan. Stir until the spinach wilts and the cheese melts.

6. Finish and serve.
Turn off the heat and let the pasta rest for 2-3 minutes. Add parsley and extra Parmesan before serving.

Essential Note

Use a large, deep skillet or heavy pot so the pasta can cook evenly. Keep the heat at a gentle simmer rather than a hard boil. A strong boil can make the cream split and cause the pasta to cook unevenly.

Cut the chicken into small, similar-size pieces. This helps all the pieces cook at about the same rate. Chicken should reach 165 F in the thickest piece for safe eating.

The amount of liquid can vary slightly depending on the pasta shape, pan size and heat level. If the pasta looks dry before it becomes tender, add a small amount of warm chicken broth and continue cooking.

Stir the pasta every few minutes, especially near the end. Pasta releases starch while it cooks, and that starch helps thicken the sauce. Do not rinse the pasta because the starch is useful for the sauce.

Add Parmesan after lowering or turning off the heat. Very high heat can make cheese turn grainy instead of smooth. If the finished sauce seems too thick, stir in 1-2 tablespoons of warm broth.

For extra vegetables, add sliced mushrooms with the onion or broccoli during the last few minutes of cooking. You can also use baby spinach because it wilts quickly.

If you use pre-cooked chicken, add it near the end instead of cooking it from the start. This keeps the chicken from becoming dry.

For the best texture, use short pasta, keep the liquid at a gentle simmer, stir often, and add Parmesan at the end for a smooth, creamy sauce.

Cooking Tips and Tricks

Cut the chicken into small pieces so it cooks quickly and evenly. Pat the chicken dry before seasoning to help it brown better.

Use a wide, deep pan. This gives the pasta enough space to cook without sticking together. Stir every few minutes and scrape the bottom of the pan gently.

Keep the heat at medium or medium-low once the liquid starts simmering. High heat can dry the sauce before the pasta becomes tender.

Check the pasta a few minutes before the package cooking time. It should feel tender but not mushy.

For a lighter sauce, replace some heavy cream with milk. For more flavor, use freshly grated Parmesan and fresh garlic.
