Vanilla Cake is a classic baked dessert made with flour, sugar, eggs, butter, milk and vanilla extract. The vanilla gives the cake its sweet and mild flavor.

The batter rises in the oven as the baking powder creates air bubbles. This gives the cake a soft and light texture. You can bake it as one round cake, two layers or cupcakes.

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • ¾ cup whole milk, room temperature
  • 2 tablespoons vegetable oil

Instructions

  1. Prepare the oven: Heat the oven to 350 F. Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. Mix dry ingredients: Whisk the flour, baking powder and salt in a medium bowl.
  3. Cream butter and sugar: Beat the softened butter and sugar until light and fluffy. This usually takes about 2 to 3 minutes.
  4. Add eggs and vanilla: Beat in the eggs one at a time. Add the vanilla extract and mix until combined.
  5. Add the dry mixture: Add the flour mixture in small batches. Pour in the milk between additions. Mix gently until the batter looks smooth.
  6. Add oil: Stir in the vegetable oil. Do not overmix the batter.
  7. Fill the pan: Pour the batter into the prepared pan. Spread the top evenly.
  8. Bake: Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Cool: Let the cake cool in the pan for about 10 minutes. Remove it from the pan and cool completely on a wire rack before frosting or slicing.

Essential Note

Use room-temperature eggs, milk and butter so the batter mixes evenly. Cold ingredients can make the butter firm and cause a lumpy batter. Measure the flour carefully because too much flour can make the cake heavy and dry. Spoon flour into a measuring cup and level the top instead of packing it down.

Do not overmix after adding the flour. Too much mixing develops gluten and can make the cake chewy instead of tender. Also, check your oven temperature before baking because ovens can run hotter or cooler than the displayed temperature.

Avoid opening the oven during the first 25 minutes. A sudden drop in temperature can cause the cake to sink. Start checking near the end of the baking time with a toothpick. If it comes out clean or has a few moist crumbs, the cake is ready.

Let the cake cool fully before adding frosting. A warm cake can melt buttercream and make the surface messy. Store the finished cake in an airtight container at room temperature for up to 2 days, or refrigerate it if you use a perishable frosting.

For extra vanilla flavor, use pure vanilla extract and add a small pinch of salt. Serve the cooled cake with buttercream, fresh berries or powdered sugar.
