What is Red Velvet Cake
Red Velvet Cake is a lightly chocolate-flavored layer cake known for its red color and creamy frosting. Cocoa powder gives the cake a gentle chocolate taste, while buttermilk and vinegar add a mild tang and help create a soft crumb.
The cake often pairs with cream cheese frosting. The balance of sweet cake, tangy frosting and light cocoa makes each bite rich but not too heavy.
Ingredients
For the Cake
- 2 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon unsweetened cocoa powder
- 1 1/2 cups buttermilk
- 1 1/2 cups vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 tablespoon white vinegar
- 1-2 tablespoons red food coloring
For the Cream Cheese Frosting
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1-2 tablespoons heavy cream or milk, if needed
Instructions
- Prepare the oven and pans: Heat the oven to 350 F. Grease two 9-inch round cake pans and line the bottoms with parchment paper.
- Mix the dry ingredients: Whisk flour, sugar, baking soda, salt and cocoa powder in a large bowl.
- Mix the wet ingredients: In another bowl, whisk buttermilk, oil, eggs, vanilla, vinegar and red food coloring until smooth.
- Make the batter: Slowly add the wet mixture to the dry ingredients. Stir just until the batter looks smooth. Do not overmix.
- Bake the cakes: Divide the batter evenly between the pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Cool completely: Let the cakes cool in the pans for about 10 minutes. Transfer them to a wire rack and let them cool fully before frosting.
- Make the frosting: Beat cream cheese and butter until smooth. Add powdered sugar gradually, then mix in vanilla. Add a little cream or milk if the frosting feels too thick.
- Assemble the cake: Place one cake layer on a plate. Spread frosting over the top. Add the second layer and cover the top and sides with the remaining frosting.
- Chill and serve: Refrigerate the cake for 30-60 minutes to help the frosting set. Slice and serve.
Essential Note
- Room-temperature ingredients help the batter mix evenly and create a smoother cake. Measure the flour carefully. Too much flour can make the cake dry and dense.
- Do not add too much cocoa powder. Red Velvet Cake has a mild cocoa flavor, not the strong chocolate taste of a chocolate cake.
- The vinegar works with the buttermilk and baking soda to support the cake’s texture. It also adds a slight tang that works well with the cream cheese frosting.
- Do not overmix the batter after adding the flour. Mix only until you no longer see dry flour. Overmixing can develop too much gluten and make the cake firm.
- Use gel food coloring when possible for a deeper red color without adding too much liquid. Start with a small amount and adjust the color to your preference.
- Check the cake near the end of the baking time. Oven temperatures can vary, so use a toothpick rather than relying only on the clock. Let the cake cool completely before frosting, or the frosting may melt and slide.
- For clean cake layers, you can chill the cooled cakes before assembling them. A serrated knife can also help you level the tops if the cakes rise unevenly.
Recipe Notes
Store leftover Red Velvet Cake covered in the refrigerator for up to 4 days. Let each slice sit briefly at room temperature before serving.
Cooking Tips and Tricks
Use room-temperature eggs, buttermilk and cream cheese for a smooth mixture. Spoon flour into the measuring cup and level it instead of packing it down. Keep the cocoa powder amount moderate so the cake keeps its classic flavor and color. Mix the batter gently and stop as soon as the ingredients combine. Divide the batter evenly between the pans so both layers finish at the same time. Do not frost warm cake layers. Chill the layers first if they feel soft or delicate. For smooth frosting, beat the cream cheese and butter well before adding powdered sugar. If the frosting becomes too soft, refrigerate it for 15-20 minutes before spreading. Use a sharp serrated knife for neat slices.
