What is Strawberry Cake?
Strawberry Cake is a homemade cake made with fresh strawberries and a soft vanilla-style cake base. You can mix chopped strawberries into the batter or use them between cake layers.
Many versions include whipped cream, strawberry frosting, or fresh berries on top. This recipe keeps the cake soft and moist while letting the natural strawberry flavor stand out.
Ingredients
For the Cake:
- 2 cups all-purpose flour
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup whole milk
- 1 cup fresh strawberries, finely chopped
For the Strawberry Topping:
- 1 ½ cups fresh strawberries, sliced
- 2 tablespoons granulated sugar
For the Cream Frosting:
- 1 cup heavy whipping cream, cold
- 3 tablespoons powdered sugar
- ½ teaspoon vanilla extract
Instructions
- Heat the oven: Set the oven to 350 F. Grease and line an 8-inch round cake pan with parchment paper.
- Mix dry ingredients: Whisk the flour, baking powder and salt in a medium bowl.
- Cream butter and sugar: Beat the softened butter and sugar until light and smooth.
- Add eggs and vanilla: Beat in the eggs one at a time. Add the vanilla extract and mix well.
- Make the batter: Add the dry mixture in two parts, alternating with milk. Mix just until combined.
- Add strawberries: Gently fold the chopped strawberries into the batter. Do not overmix.
- Bake: Pour the batter into the prepared pan and smooth the top. Bake for 35 to 42 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the cake: Let the cake rest in the pan for 10 minutes. Move it to a wire rack and let it cool completely.
- Prepare the topping: Toss the sliced strawberries with sugar. Let them sit for about 10 minutes.
- Make the cream: Beat the cold heavy cream, powdered sugar and vanilla until soft peaks form.
- Decorate: Spread the whipped cream over the cooled cake. Add the sliced strawberries on top.
- Serve: Slice with a sharp knife and serve immediately or chill until ready to eat.
Essential Note
- Use ripe but firm strawberries for the best flavor and texture. Very soft berries contain more liquid, which can make the cake batter too wet. Wash the strawberries before cutting them, then dry them very well with paper towels. Extra water can affect the cake texture.
- Bring the butter and eggs close to room temperature before mixing. This helps the batter blend smoothly. Do not beat the batter after adding the flour because too much mixing can make the cake dense.
- Check the cake near the end of the baking time. Oven temperatures can vary, so use a toothpick to test the center. If the toothpick comes out with a few moist crumbs but no wet batter, the cake is ready.
- Cool the cake completely before adding whipped cream. A warm cake can melt the cream and make the topping slide. Keep the finished cake covered in the refrigerator if you are not serving it right away. For the best texture, let it sit at room temperature for about 10 to 15 minutes before serving.
Recipe Notes
Use fresh, dry strawberries and cool the cake completely before frosting. Store leftovers covered in the refrigerator and enjoy within two days for the best texture.
Cooking Tips and Tricks
- Choose strawberries that smell sweet and have a bright red color. Dry them well after washing to limit extra moisture.
- Do not overmix the batter after adding flour. Mix until you no longer see dry flour.
- Use softened butter, not melted butter. Soft butter helps create a lighter cake.
- Keep the heavy cream cold before whipping. A cold bowl also helps the cream thicken faster.
- Wait until the cake cools fully before adding frosting. For neat slices, chill the decorated cake for 20 to 30 minutes before cutting.
- If the strawberries release a lot of juice, drain some of the liquid before placing them on the cake. This keeps the topping fresh and prevents soggy slices.
