Carrot Cake is a sweet cake made with freshly grated carrots, flour, eggs, sugar, oil and warm spices such as cinnamon. Many recipes also include chopped walnuts or pecans and a smooth cream cheese frosting.

The carrots soften as the cake bakes and give it a moist texture. The oil helps keep the crumb tender, while cinnamon adds a gentle spice flavor. Cream cheese frosting adds a cool, tangy contrast to the sweet cake.

Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 2 cups finely grated carrots
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup chopped walnuts or pecans
  • 1/2 cup crushed pineapple, well drained, optional

For the Cream Cheese Frosting:

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the oven: Heat the oven to 350 F. Grease two 8-inch round cake pans and line the bottoms with parchment paper.
  2. Mix dry ingredients: Add flour, cinnamon, nutmeg, baking powder, baking soda and salt to a bowl. Whisk until evenly combined.
  3. Mix wet ingredients: In another large bowl, whisk the eggs, granulated sugar, brown sugar, oil and vanilla until smooth.
  4. Add carrots: Stir the grated carrots into the wet mixture.
  5. Combine: Add the dry mixture to the wet mixture. Stir just until no dry flour remains. Do not overmix.
  6. Add nuts: Fold in the chopped walnuts or pecans. Add drained pineapple if using.
  7. Bake: Divide the batter between the prepared pans. Bake for about 28-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  8. Cool: Let the cakes cool in the pans for about 10 minutes. Transfer them to a wire rack and cool completely.
  9. Make frosting: Beat the cream cheese and butter until smooth. Add powdered sugar gradually, then mix in vanilla.
  10. Frost: Place one cake layer on a plate. Spread frosting over it, add the second layer, then frost the top and sides.

Essential Note:

  • Use fresh, finely grated carrots for the best texture. Do not squeeze out their moisture unless the carrots release a large amount of liquid. Large carrot pieces can make the cake uneven and harder to slice.
  • Measure the flour carefully because too much flour can make the cake dry. Spoon flour into a measuring cup and level the top instead of packing it down.
  • Let the eggs and dairy ingredients reach room temperature before mixing. This helps the batter combine evenly and gives the cake a smoother texture.
  • Do not overmix after adding the flour. Mix only until the ingredients come together. Overmixing can make the cake dense instead of soft.
  • Check the cake near the end of the baking time. Oven temperatures vary, so use a toothpick to test the center. A few moist crumbs are fine, but wet batter means the cake needs more time.
  • Cool the cake completely before adding cream cheese frosting. A warm cake can melt the frosting and make it slide between the layers.
  • For clean slices, chill the finished cake for about 30 minutes before serving. Store leftover frosted cake in the refrigerator and let it sit at room temperature for a short time before serving.

Recipe Notes

For extra flavor, add chopped pecans, raisins or a small amount of crushed pineapple. Always drain pineapple well so extra liquid does not make the cake too wet.
