Chicken Fried Steak is a classic Southern comfort food with a crispy coating and creamy country gravy. It looks a little like fried chicken, but the main ingredient is tenderized beef steak. The steak gets a seasoned flour coating, then cooks in hot oil until golden and crisp. A simple milk gravy made in the same pan brings the whole dish together. What is Chicken Fried Steak?

Chicken Fried Steak is a breaded and fried beef steak served with creamy white gravy. Most recipes use cube steak, which comes from beef that has already been tenderized. The steak gets dipped in seasoned flour and a buttermilk mixture before frying.

The name comes from the cooking method. You prepare the beef much like fried chicken, even though the meat is beef.

Ingredients

For the steak:

  • 4 cube steaks, about 4 ounces each
  • 1 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper, optional
  • 2 large eggs
  • 1 cup buttermilk
  • 2 cups vegetable oil, for frying

For the country gravy:

  • ¼ cup reserved frying oil
  • ¼ cup all-purpose flour
  • 2 ½ cups whole milk
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder

Instructions

1. Prepare the coating: Place flour, salt, black pepper, paprika, garlic powder, onion powder and cayenne in a shallow bowl. Mix well.

2. Make the egg mixture: Whisk the eggs and buttermilk in another shallow bowl until smooth.

3. Coat the steaks: Pat the cube steaks dry. Dip each steak into the flour mixture, then the buttermilk mixture. Dip it back into the flour and press the coating gently onto the beef.

4. Heat the oil: Pour the oil into a large heavy skillet. Heat it to about 350 F. The oil should be hot enough to make the coating crisp without burning it.

5. Fry the steaks: Carefully place the coated steaks into the hot oil. Fry for about 3 to 4 minutes per side, or until golden brown and cooked through. Avoid crowding the pan.

6. Drain the steaks: Move the fried steaks to a wire rack or paper towel-lined plate. Let excess oil drain while you make the gravy.

7. Make the country gravy: Keep about ¼ cup of the frying oil in the skillet. Whisk in the flour and cook for 1 to 2 minutes. Slowly add the milk while whisking to prevent lumps.

8. Season and thicken: Add salt, black pepper and garlic powder. Cook for 3 to 5 minutes, stirring often, until the gravy becomes thick and creamy.

9. Serve: Place a crispy steak on each plate and spoon warm country gravy over the top. Serve right away.

Essential Note:
Keep the oil temperature close to 350 F while frying. If the oil gets too cool, the coating can absorb excess oil and turn greasy. If it gets too hot, the crust can burn before the steak cooks properly. Use a thermometer if possible. Do not press the steaks while they fry because this can remove the crispy coating. For the best crust, coat the steaks just before frying and leave space between each piece. When making gravy, add the milk slowly while whisking constantly. If the gravy becomes too thick, add a little more milk. If it stays thin, simmer it for another minute or two. Cube steak works well because the meat has already been tenderized, but do not overcook it or it can become tough.
