Banana Cake Recipe

Banana Cake is a soft, moist dessert with a sweet banana flavor and a tender crumb. It is a smart way to use ripe bananas that are too soft for snacking. The natural sweetness of bananas also helps give the cake a rich taste without adding too much sugar. This easy banana cake works well for breakfast, an afternoon snack, or a simple dessert after dinner. I like to use very ripe bananas with brown spots because they mash easily and add more flavor. A simple cream cheese frosting or a light dusting of powdered sugar can make each slice even more special.

What is Banana Cake?
Banana Cake is a soft cake made with mashed ripe bananas, flour, eggs, butter or oil, sugar, and a few basic baking ingredients. It has a moist texture and a warm banana flavor.
Unlike banana bread, banana cake usually has a lighter and softer crumb. You can serve it plain or add cream cheese frosting, chopped nuts, chocolate chips, or a little cinnamon.
Ingredients
- 3 large ripe bananas, mashed
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream or plain Greek yogurt
- 1/2 teaspoon ground cinnamon, optional
Optional frosting:
- 4 ounces cream cheese, softened
- 2 tablespoons unsalted butter, softened
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Prepare the oven: Heat the oven to 350 F. Grease a 9-by-13-inch baking pan and line the bottom with parchment paper if desired.
- Mix the dry ingredients: Whisk flour, baking soda, baking powder, salt, and cinnamon in a bowl.
- Cream butter and sugar: Beat softened butter and sugar until light and smooth.
- Add eggs and vanilla: Beat in the eggs one at a time. Add vanilla and mix well.
- Add bananas: Stir in the mashed bananas and sour cream until combined.
- Combine: Add the dry mixture gradually. Mix just until no dry flour remains. Do not overmix.
- Bake: Pour the batter into the prepared pan. Bake for about 30-35 minutes, or until a toothpick inserted into the center comes out with only a few moist crumbs.
- Cool: Let the cake cool in the pan for about 10 minutes. Move it to a wire rack and let it cool completely before frosting.
- Frost and serve: Beat cream cheese, butter, powdered sugar, and vanilla until smooth. Spread over the cooled cake, then slice and serve.
Essential Note
- Use very ripe bananas for the best banana flavor and moisture. Bananas with brown or black spots work especially well. Measure the mashed bananas after peeling because banana size can vary.
- Bring the butter, eggs, sour cream and other refrigerated ingredients close to room temperature before mixing. This helps the batter combine smoothly and gives the cake a more even texture.
- Do not pack flour tightly into the measuring cup. Spoon it into the cup and level the top with a knife. Too much flour can make the cake dry and heavy.
- Avoid overmixing after adding the flour. Mix only until the ingredients come together. Too much mixing can develop gluten and make the cake firm instead of soft.
- Check the cake near the end of the baking time. Oven temperatures can vary, so use a toothpick to test the center. If the toothpick comes out with wet batter, bake for a few more minutes.
- Let the cake cool before adding cream cheese frosting. Warm cake can melt the frosting and make it slide off. Store frosted cake covered in the refrigerator and let slices sit at room temperature briefly before serving.
Recipe Notes
For extra flavor, add chopped walnuts or pecans, chocolate chips, or a small pinch of cinnamon to the banana cake batter.
Cooking Tips and Tricks
- Choose bananas that have plenty of brown spots. They taste sweeter and mash more easily. Mash them with a fork, but leave a few small pieces for extra banana flavor.
- Use room-temperature ingredients when possible. They blend better and help create a smooth batter. Measure flour carefully because excess flour can make the cake dry.
- Do not overmix the batter after adding flour. Stop as soon as you no longer see dry flour. This keeps the crumb soft and tender.
- Bake the cake on the center rack for even heat. Start checking it a few minutes before the suggested baking time. A toothpick should come out mostly clean with a few moist crumbs.
- For clean slices, cool the cake fully before cutting. If you use cream cheese frosting, keep the finished cake refrigerated.
