Garlic Parmesan Pasta is a quick pasta dish made with cooked pasta tossed in a garlic, butter, and Parmesan sauce. Pasta water helps the cheese and butter form a smooth sauce that coats each strand or piece of pasta.

You can make it with spaghetti, fettuccine, linguine, penne, or your favorite pasta. It tastes great on its own, but you can also add chicken, shrimp, mushrooms, spinach, or broccoli for a fuller meal.

Ingredients

  • 8 ounces spaghetti or other pasta
  • 4 tablespoons unsalted butter
  • 4 garlic cloves, finely minced
  • ½ cup freshly grated Parmesan cheese
  • ½ cup reserved pasta water, plus more if needed
  • ½ teaspoon salt, for the pasta water
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • ¼ teaspoon red pepper flakes, optional
  • 1 tablespoon olive oil, optional

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta until al dente, following the package directions.
  2. Save pasta water: Before draining, reserve ½ cup of the hot pasta water.
  3. Cook the garlic: Melt the butter in a large skillet over medium-low heat. Add the garlic and cook for about 30-60 seconds until fragrant. Do not let it turn dark brown.
  4. Add the pasta: Add the drained pasta to the skillet. Toss well so the butter and garlic coat the pasta.
  5. Make the sauce: Slowly add the reserved pasta water while tossing. Add the Parmesan a little at a time and keep tossing until the cheese melts into a smooth sauce.
  6. Season: Add black pepper and red pepper flakes, if using. Taste and add salt only if needed.
  7. Finish: Add fresh parsley and toss again. Serve hot with extra Parmesan on top.

Essential Note

The most important part of Garlic Parmesan Pasta is controlling the heat. Keep the skillet on low or medium-low heat when adding Parmesan. Very high heat can make the cheese clump instead of melting smoothly.

Always reserve pasta water before draining the noodles. The water contains starch, which helps the butter and cheese create a silky sauce that sticks to the pasta.

Grate Parmesan from a block when possible. Pre-shredded cheese often contains anti-caking ingredients that can affect how smoothly it melts.

Add the pasta water slowly rather than all at once. You may not need the full ½ cup. Toss the pasta as you add the water until the sauce reaches a light, creamy texture.

Cook the garlic gently. Burned garlic can taste bitter and can overpower the mild Parmesan sauce.

Use freshly grated Parmesan, keep the garlic from burning, and add pasta water slowly for a smooth sauce that coats every bite of pasta.

Cook the pasta until al dente. It should stay slightly firm because it will cook again in the skillet.

Keep the garlic heat low. Garlic cooks quickly, and even a little burning can make the whole sauce bitter.

Reserve extra pasta water if you are unsure about the amount. You can always add more, but you cannot easily remove too much liquid.

Add Parmesan gradually while tossing the pasta. This helps the cheese melt into the sauce instead of forming lumps.

For extra flavor, add a small pinch of red pepper flakes. For a complete meal, add grilled chicken, shrimp, spinach, or roasted vegetables.
