What is Teriyaki Salmon?

Teriyaki Salmon is salmon cooked with a sweet and savory teriyaki sauce. The sauce usually combines soy sauce, brown sugar or honey, garlic, ginger and a little sesame oil.

You can pan-sear, bake or broil the salmon. Pan-searing gives the fish lightly crisp edges, while baking offers an easy hands-off method.

Ingredients

  • 4 salmon fillets, about 6 ounces each
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon water
  • 1 teaspoon cornstarch
  • 1 tablespoon neutral cooking oil
  • 1 teaspoon sesame seeds
  • 2 green onions, thinly sliced
  • Black pepper, to taste

Instructions

1. Make the sauce: Add soy sauce, brown sugar, honey, rice vinegar, sesame oil, garlic and ginger to a small bowl. Stir until the sugar starts to dissolve.

2. Prepare the salmon: Pat the salmon fillets dry with paper towels. Season lightly with black pepper. Avoid adding much salt because soy sauce already contains salt.

3. Thicken the glaze: Mix the cornstarch with water in a small bowl. Add it to the teriyaki sauce and stir well.

4. Sear the salmon: Heat the cooking oil in a large skillet over medium heat. Place the salmon skin-side down if the fillets have skin. Cook for about 4-5 minutes.

5. Turn and glaze: Carefully flip the salmon. Pour the teriyaki sauce into the skillet. Cook for another 3-5 minutes, spooning the sauce over the fish.

6. Check the salmon: The salmon should flake easily with a fork and reach 145 F in the thickest part for food safety.

7. Serve: Transfer the salmon to plates. Spoon extra teriyaki glaze over the top. Sprinkle with sesame seeds and green onions.

Essential Note

Keep the heat at medium or medium-low after adding the teriyaki sauce. High heat can make the sugar burn before the salmon finishes cooking. Salmon fillets vary in thickness, so cooking time can change. Use an instant-read thermometer in the thickest part rather than relying only on time. Cook salmon to 145 F for food safety. If the sauce becomes too thick, add a tablespoon of water and stir. If it stays thin, let it simmer for another minute or two. Patting the salmon dry before cooking also helps it sear instead of steaming.
