What is Blackened Salmon?

Blackened Salmon is salmon coated with a seasoned spice mixture and cooked in a hot skillet. The spices form a dark, crisp crust as they toast in the pan.

The dark color does not mean the salmon has burned. Paprika, black pepper, garlic powder and other spices create the rich crust. The salmon should have a flaky center and a well-browned outside.

  • 4 salmon fillets, about 6 ounces each
  • 2 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper, optional
  • 1 tablespoon lemon juice
  • Lemon wedges, for serving

Instructions

  1. Pat the salmon dry: Use paper towels to remove excess moisture. This helps the seasoning stick and gives the salmon a better crust.
  2. Make the seasoning: Mix paprika, smoked paprika, garlic powder, onion powder, thyme, oregano, black pepper, salt and cayenne pepper in a small bowl.
  3. Season the salmon: Brush the fillets lightly with olive oil. Coat both sides with the spice mixture and press it gently onto the fish.
  4. Heat the skillet: Place a heavy skillet over medium-high heat. Add the remaining olive oil and let it become hot but not smoking.
  5. Cook the salmon: Place the salmon skin-side down if the fillets have skin. Cook for about 4-5 minutes without moving them.
  6. Flip and finish: Turn the salmon carefully. Cook for another 3-4 minutes, depending on thickness, until the center flakes easily.
  7. Add lemon: Remove the salmon from the heat and add a small squeeze of lemon juice. Garnish with parsley and serve warm.

Essential Note: The cooking time depends on the thickness of the salmon. Use a food thermometer for the most reliable result. The FDA recommends cooking fish to an internal temperature of 145 F. Insert the thermometer into the thickest part of the fillet. Avoid pressing or cutting the salmon often while it cooks because this can release moisture. Keep the skillet hot enough to brown the spices, but lower the heat if the seasoning starts to burn before the fish cooks through. If your salmon fillets are very thick, finish them over medium heat so the center cooks without making the crust too dark.
