Cheese Sauce Recipe

Cheese Sauce is a creamy, smooth sauce that can make simple food taste rich and comforting. It works well with pasta, fries, nachos, vegetables, burgers, and baked dishes. The best part is how easy it is to make at home with a few basic ingredients. You only need butter, flour, milk, and cheese to build the sauce. A little salt and seasoning can bring the flavor together. When I make cheese sauce, I always cook it slowly and add the cheese at the right time. This helps create a smooth sauce without lumps. Once you learn the basic method, you can make it often.

What is Cheese Sauce
Cheese Sauce is a thick, creamy sauce made by combining a butter and flour mixture with milk, then adding grated cheese. Cheddar gives it a classic flavor, but you can use other cheeses for different results.
It has a smooth texture and rich taste. You can serve it warm with pasta, steamed vegetables, potato wedges, fries, nachos, or sandwiches.
Ingredients
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups whole milk
- 1 cup freshly shredded sharp cheddar cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1 tablespoon grated Parmesan cheese, optional
Instructions
- Melt the butter: Place a saucepan over medium-low heat. Add the butter and let it melt without browning.
- Add the flour: Stir in the flour. Cook for about 1 minute while stirring. This removes the raw flour taste.
- Pour in the milk: Slowly add the milk while whisking. Keep whisking until the mixture becomes smooth.
- Thicken the sauce: Cook for 3 to 5 minutes. Stir often until the milk mixture becomes slightly thick.
- Add the cheese: Lower the heat. Add the shredded cheddar a little at a time and stir until fully melted.
- Season: Add salt, black pepper, garlic powder and paprika. Add Parmesan if you want a deeper cheese flavor.
- Serve: Remove the saucepan from the heat and serve the cheese sauce while warm.
Essential Note
Use freshly shredded cheese for the smoothest texture. Pre-shredded cheese often contains anti-caking agents that can make the sauce less smooth.
Keep the heat low after adding the cheese. High heat can cause the cheese to separate and leave you with an oily or grainy sauce.
If the sauce becomes too thick, whisk in 1 to 2 tablespoons of warm milk at a time until it reaches the texture you want. If it looks too thin, cook it for another minute or two over low heat while stirring.
For a richer cheese sauce, use sharp cheddar. For a milder taste, use mild cheddar or Monterey Jack. You can also mix two cheeses for a more complex flavor.
Do not add all the cheese at once. Small amounts melt more evenly and give you better control over the final texture.
Taste the sauce before adding more salt because many cheeses already contain plenty of salt.
Serve the sauce soon after cooking. As it cools, the cheese and butter will make it thicker. For reheating, use low heat and add a small splash of milk while stirring.
Recipe Notes
For a smooth cheese sauce, grate the cheese yourself, use low heat, add cheese gradually, and stir often while the sauce cooks.
Cooking Tips and Tricks
Start with medium-low heat when making the butter and flour base. Stir the flour into the butter for about 1 minute, but do not let it turn dark.
Add milk slowly and whisk as you pour. This simple step helps prevent lumps and gives the sauce a silky texture.
Freshly shredded cheese melts better than packaged shredded cheese. Sharp cheddar gives a stronger flavor, while Monterey Jack makes the sauce softer and creamier.
Always lower the heat before adding cheese. Strong heat can make cheese sauce oily or grainy.
If your sauce gets too thick, add warm milk little by little. If it stays thin, cook it for another minute while stirring.
Taste at the end and adjust the salt and seasoning. Serve the sauce warm for the best texture.
