Instructions

- Cook the garlic: Add minced garlic and cook for about 30–45 seconds. Stir often until fragrant.
- Add the flour: Sprinkle in the flour and whisk for about 1 minute. This creates a light base for the sauce.
- Add cream and milk: Slowly pour in the heavy cream and milk while whisking. Keep stirring until the mixture starts to thicken.
- Add Parmesan: Lower the heat. Add Parmesan a little at a time and whisk until melted and smooth.
- Season: Add salt, black pepper, Italian seasoning, and red pepper flakes if using.
- Finish: Stir in fresh parsley. Serve the sauce while warm.
Essential Note
Keep the heat low after adding Parmesan. High heat can make cheese separate, turn oily, or become grainy. Freshly grated Parmesan melts much better than pre-shredded cheese because many packaged cheeses contain anti-caking ingredients. If the sauce becomes too thick, whisk in 1–2 tablespoons of warm milk until it reaches the texture you want. If it seems too thin, let it cook gently for another minute or two. Do not boil the sauce. For pasta, save a little pasta water and add it slowly if needed. The starch can help loosen the sauce while keeping it silky. Taste before adding more salt because Parmesan already has a salty flavor.
