- ¼ teaspoon black pepper

Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta until al dente, following the package directions.
- Save pasta water: Before draining, reserve ½ cup of the hot pasta water.
- Cook the garlic: Melt the butter in a large skillet over medium-low heat. Add the garlic and cook for about 30-60 seconds until fragrant. Do not let it turn dark brown.
- Add the pasta: Add the drained pasta to the skillet. Toss well so the butter and garlic coat the pasta.
- Make the sauce: Slowly add the reserved pasta water while tossing. Add the Parmesan a little at a time and keep tossing until the cheese melts into a smooth sauce.
- Season: Add black pepper and red pepper flakes, if using. Taste and add salt only if needed.
- Finish: Add fresh parsley and toss again. Serve hot with extra Parmesan on top.
Essential Note
The most important part of Garlic Parmesan Pasta is controlling the heat. Keep the skillet on low or medium-low heat when adding Parmesan. Very high heat can make the cheese clump instead of melting smoothly.
