What is Tuscan Chicken Pasta
Tuscan Chicken Pasta is a creamy pasta dish made with chicken, Parmesan cheese, spinach, sun-dried tomatoes and a garlic cream sauce. It takes inspiration from Tuscan-style flavors, but this popular dish is not a traditional classic from Tuscany. The creamy sauce brings the ingredients together and gives the pasta a smooth, rich texture.
Ingredients
- 12 ounces penne or fettuccine pasta
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, sliced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 3/4 cup freshly grated Parmesan cheese
- 2 cups fresh baby spinach
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes, optional
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 1/4 cup fresh basil, chopped, optional
Instructions
- Cook the pasta: Boil a large pot of salted water. Cook the pasta until al dente. Reserve 1/2 cup pasta water, then drain.
- Cook the chicken: Slice the chicken into thin strips. Season with salt, black pepper and Italian seasoning. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 4-6 minutes per side, until golden and fully cooked. Remove it from the skillet.
- Cook the garlic and tomatoes: Lower the heat to medium. Add butter, garlic and sun-dried tomatoes to the same skillet. Cook for about 1 minute, stirring often.
- Make the sauce: Pour in the chicken broth and scrape the browned bits from the bottom of the skillet. Add heavy cream and bring it to a gentle simmer.
- Add cheese and spinach: Stir in Parmesan cheese. Add spinach and cook for 1-2 minutes until it wilts. Add red pepper flakes if you like a little heat.
- Combine everything: Return the chicken to the skillet. Add the cooked pasta and toss well. If the sauce feels too thick, add a little reserved pasta water until it reaches the texture you want.
- Serve: Taste and adjust the salt and pepper. Top with fresh basil and extra Parmesan, then serve hot.
Essential Note
Cook the chicken until it reaches 165 F in the thickest part. This keeps the chicken safe and juicy. Avoid boiling the cream sauce hard, because high heat can make the sauce separate or become grainy.
Use freshly grated Parmesan when possible. It melts more smoothly than pre-shredded cheese and gives the sauce a better texture.
Cook the pasta just until al dente. Slightly firm pasta holds up better when you toss it with the hot cream sauce. Save some pasta water before draining because its starch can loosen the sauce and help it cling to the pasta.
If your sun-dried tomatoes come packed in oil, drain them well before slicing. You can use a little of their oil in place of olive oil for a stronger tomato flavor.
Add spinach near the end of cooking. It only needs a short time to wilt, and this helps keep its color and fresh taste.
If the finished sauce becomes too thick, add reserved pasta water 1 tablespoon at a time. If it seems too thin, simmer it gently for another minute or two before adding more cheese.
Recipe Notes
For a lighter sauce, use half-and-half instead of heavy cream, but expect a thinner texture. Add extra spinach, chicken or vegetables for a fuller meal.
Cooking Tips and Tricks
Cut the chicken into similar-size pieces so they cook at the same rate. Pat the chicken dry before seasoning to help it brown nicely in the skillet.
Do not overcrowd the pan. Cook the chicken in batches if needed, because too much chicken can release water and prevent good browning.
Use medium heat when making the cream sauce. Gentle heat keeps the dairy smooth and reduces the chance of curdling.
Grate Parmesan finely so it melts quickly. Add it gradually while stirring instead of dumping it all in at once.
Taste the sauce before adding more salt. Parmesan and sun-dried tomatoes already contain plenty of flavor.
