  • ¼ cup reserved pasta water, as needed

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta until al dente according to the package directions. Reserve ¼ cup of pasta water, then drain.
  2. Season the chicken: Pat the chicken dry. Season both sides with salt, black pepper and Italian seasoning.
  3. Cook the chicken: Heat olive oil in a large skillet over medium heat. Cook the chicken for about 5-7 minutes per side, depending on thickness. Cook until the center reaches 165 F. Transfer to a plate and let it rest for a few minutes.
  4. Slice the chicken: Cut the rested chicken into thin strips or bite-size pieces.
  5. Make the sauce: Melt butter in the same skillet over medium-low heat. Add garlic and cook for about 30 seconds until fragrant. Do not let the garlic turn brown.
  6. Add the cream: Pour in the heavy cream and stir. Let it gently simmer for 2-3 minutes.
  7. Add Parmesan: Lower the heat and slowly stir in the grated Parmesan. Keep stirring until the cheese melts and the sauce becomes creamy.
  8. Combine everything: Add the cooked pasta to the skillet. Toss well so the Alfredo sauce coats every strand. Add a small amount of reserved pasta water if the sauce looks too thick.
  9. Finish the dish: Add the sliced chicken and toss gently. Top with fresh parsley and extra Parmesan before serving.

Essential Note

The most important part of Chicken Alfredo Pasta is controlling the heat. High heat can make the cream sauce separate and can cause Parmesan cheese to become grainy. Keep the sauce on low or medium-low heat when adding the cheese.

Use freshly grated Parmesan instead of pre-shredded cheese when possible. Packaged shredded cheese often contains ingredients that can affect how smoothly it melts.

Do not rinse the pasta after draining. The starch left on the pasta helps the Alfredo sauce cling to it. Save some pasta water before draining because its starch can loosen a thick sauce while keeping a creamy texture.

For the chicken, use a meat thermometer if possible. The thickest part should reach 165 F for safe eating. Let the chicken rest before slicing so the juices stay inside.

If the finished sauce becomes too thick, add pasta water one tablespoon at a time. If it becomes too thin, let it gently cook for another minute or two while stirring.
