Garlic Shrimp Pasta is a pasta dish made with sautéed shrimp, fresh garlic, pasta and a simple sauce. The sauce can use butter, olive oil, Parmesan cheese and reserved pasta water for a silky texture.

The key is to cook the shrimp just until they turn pink and firm. Overcooked shrimp can become tough, so keep a close eye on them.

Ingredients

  • 8 ounces spaghetti or linguine
  • 1 pound large shrimp, peeled and deveined
  • 4 cloves garlic, finely minced
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup reserved pasta water
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes, optional
  • 2 tablespoons chopped fresh parsley
  • Extra Parmesan, for serving
  • Lemon wedges, for serving

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta until al dente, following the package directions. Save 1/2 cup pasta water, then drain.
  2. Season the shrimp: Pat the shrimp dry with paper towels. Season both sides with salt and black pepper.
  3. Cook the shrimp: Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for about 1-2 minutes per side, until pink and cooked through. Remove them from the skillet.
  4. Cook the garlic: Lower the heat to medium. Add butter and minced garlic to the same skillet. Cook for about 30-60 seconds until fragrant. Do not let the garlic turn dark brown.
  5. Build the sauce: Add the reserved pasta water and red pepper flakes. Stir well and let it simmer for 1-2 minutes.
  6. Add pasta and Parmesan: Add the cooked pasta to the skillet. Sprinkle in Parmesan and toss until the sauce coats the pasta.
  7. Add shrimp: Return the shrimp to the skillet. Add lemon juice and parsley. Toss gently for about 30 seconds.
  8. Serve: Divide the pasta among plates. Add extra Parmesan, parsley and a lemon wedge before serving.

Essential Note

Use dry shrimp before cooking because extra moisture can prevent proper browning. Cook shrimp in a single layer and remove them as soon as they turn pink and opaque. Large shrimp may need slightly more cooking time, while small shrimp cook faster.

Do not cook minced garlic over high heat. Garlic can burn quickly and give the sauce a bitter taste. Keep the heat at medium or medium-low once you add the garlic.

Save the pasta water before draining. The starch in the water helps the butter, Parmesan and other ingredients form a smooth sauce that sticks to the pasta. Add the water little by little rather than pouring it all in at once.

For the best texture, use freshly grated Parmesan. Pre-shredded cheese may not melt as smoothly. Add Parmesan after reducing the heat so it blends into the sauce without becoming clumpy.

Lemon juice should go in near the end. Its fresh acidity balances the rich butter and cheese while keeping the shrimp pasta from tasting too heavy.
