Please read our Privacy & Disclosure Policy disclosure policy.
Coconut Cake is a soft, moist dessert with a sweet coconut flavor in every bite. It makes a lovely choice for birthdays, family dinners, holidays, or a simple afternoon treat. The cake has a light crumb, while shredded coconut adds a pleasant texture. A creamy frosting on top makes it even more special. I like serving this cake slightly chilled because the coconut flavor becomes richer as it rests. The recipe uses simple ingredients and easy steps, so you do not need advanced baking skills. With the right oven temperature and careful mixing, you can make a tender coconut cake that looks and tastes homemade.

What is Coconut Cake?
Coconut Cake is a classic layer or sheet cake made with coconut, flour, eggs, butter, sugar, and milk. Shredded coconut gives the cake its main flavor and texture. Many versions use coconut frosting or a simple vanilla glaze. This recipe creates a soft cake with a rich coconut taste without making it overly sweet.
Ingredients
For the Cake:
- 2 cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon coconut extract
- ¾ cup canned coconut milk
- 1 cup sweetened shredded coconut
For the Frosting:
- ½ cup unsalted butter, softened
- 2 cups powdered sugar
- 2 to 3 tablespoons coconut milk
- ½ teaspoon vanilla extract
- ½ cup shredded coconut, for topping
Instructions
- Prepare the oven: Heat the oven to 350 F. Grease a 9-by-13-inch baking pan and lightly dust it with flour.
- Mix dry ingredients: Add flour, baking powder, baking soda and salt to a bowl. Whisk them together.
- Cream butter and sugar: Beat the softened butter and sugar until light and fluffy. This usually takes about 2 to 3 minutes.
- Add eggs: Beat in the eggs one at a time. Add vanilla and coconut extract.
- Combine the batter: Add the dry mixture in small portions, alternating with coconut milk. Mix just until combined.
- Add coconut: Fold in the shredded coconut with a spatula. Do not overmix the batter.
- Bake: Pour the batter into the prepared pan and spread it evenly. Bake for about 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool: Let the cake cool in the pan for about 10 minutes. Move it to a wire rack and let it cool completely before frosting.
- Make the frosting: Beat butter until smooth. Slowly add powdered sugar, then mix in coconut milk and vanilla until creamy.
- Finish the cake: Spread the frosting over the cooled cake. Sprinkle shredded coconut on top and slice before serving.
Essential Note: Use room-temperature butter, eggs and coconut milk for a smoother batter. Measure flour by spooning it into a measuring cup and leveling the top instead of packing it down. Too much flour can make the cake dry. Mix the batter only until the ingredients come together, since extra mixing can create a heavy texture. Keep an eye on the cake during the last few minutes of baking because oven temperatures vary. A toothpick should come out clean or with a few moist crumbs, but it should not have wet batter. Cool the cake completely before adding frosting, or the frosting may melt and slide. If your coconut milk has separated, stir or shake it well before measuring.
Recipe Notes
Store leftover Coconut Cake in an airtight container in the refrigerator for up to 4 days. Let slices sit at room temperature briefly before serving for a softer texture.
Cooking Tips and Tricks
Use full-fat coconut milk for a richer flavor and softer crumb. Do not replace it with plain water. Toast the shredded coconut for a few minutes if you want a deeper nutty taste and a crisp topping. Keep the butter soft, but do not melt it when making the batter. Creaming butter and sugar properly helps create a lighter cake. Add eggs one at a time so the mixture stays smooth. Do not overmix after adding flour. Check the cake early because baking times can vary between ovens and pans. Always cool the cake before frosting. For cleaner slices, chill the frosted cake for 20 to 30 minutes before cutting.
